Spiced Acorn Squash

Acorn squash is the perfect side dish for fall. Place it on your plate alongside a piece of grilled or baked chicken to complement the two rustic flavors.

Ingredients

  • 2 tablespoons butter
  • 1/4 cup packed brown sugar
  • 1/8 teaspoon ground cinnamon
  • A few grindings of fresh nutmeg
  • 1/4 cup raisins
  • 1/4 cup chopped pecans

Instructions

Cut a small acorn squash in half and scoop out seeds and strings, prick skin several times, place cut side down in glass casserole dish and cover the bottom of the dish with water.

Cook in microwave on high power until done, but firm.

Combine butter, brown sugar, cinnamon, nutmeg, raisins, and pecan pieces in a medium saucepan. Bring to a boil, stirring constantly until sugar is dissolved.

Spoon mixture into the center of the squash.

Heat oven to broil. Place 6 inches under broiler until mixture bubbles. Cool slightly before serving so that mixture thickens.
